Small Batch, Artisanal Sausages

For a long time, the craft of making sausages from scratch, without pre-mixed seasonings or synthetic additives, was nearly lost. For families like ours, living with allergies and food sensitivities, it meant we simply couldn’t eat what was available. Every time we asked what was in them, we’d see the same thing: a bag of commercial pre-mix, filled with preservatives, binders, and other ingredients we couldn’t eat and didn’t want to.

When we asked butchers if they could make sausages from scratch, without the chemicals, and fillers most hesitated. Some didn’t have the skills. Others simply weren’t interested.

Thankfully, we eventually connected with a few butchers who were willing to experiment — to dig into old cookbooks and recipe cards to rediscover forgotten flavours and recipes. They were passionate about real food and traditional craftsmanship. With their help, we began developing our own recipes, tailored to our family’s needs.

In 2010, we opened our own butcher shop, with Master Butcher Carlos leading the way. With Carlos' expertise and our shared commitment to clean, honest ingredients, we’ve been able to refine our sausage recipes until they were just the way we wanted them and explore new flavors. All made from scratch, and always in small batches.

Our process may use modern tools, but the methods remain true to how sausages were made for centuries. Our own certified organic meat is measured out by hand and ground to the perfect consistency. Certified organic spices are gathered and measured out according to the recipe. If the recipe calls for honey or maple syrup these are measured and added to give the sausages the perfect amount of organic sweetness. The spices are gently combined with the meat until they are well mixed. They are then put in an allergy friendly casing and flash frozen to maintain their freshness. This simple process and the simple ingredients equal wonderful flavor.

There are no binders, fillers, preservatives, corn syrup, cane sugar, MSG, artificial flavors or colors. Just simple, recognizable ingredients with no dictionary required.

We’re proud to feed our family and yours sausages made the small batch artisanal old-fashioned way. Hand made with healthy ingredients.
