A whole chicken is one of the most economical ways to purchase chicken. They are versatile when roasted whole or cut up and used in many different recipes including on the BBQ. They also leave you with lots of great bones for making stock. However, many of our customers have never cut up a whole chicken. We have noticed an increase in the number of people asking this question and so we thought we would post the links to two videos. The first gives you step by step instructions on how to cut up a chicken. The second video shows how to debone a chicken breast so that you end up with boneless skinless chicken breasts.
 
These videos are great step by step instructions, however we also have a few suggestions.
 
  • Make sure that your knife is sharp. While you can cut up a chicken with a dull knife a sharp knife makes the process much easier.
 
  • Always make sure that use a clean surface to cut up the chicken and after you cut your chicken that you wash everything you used with soap and water.
 
  • Once you have cut up the chicken and are ready to make stock, we would recommend that you roast the chicken bones in the oven until they are lightly golden brown. We prefer the stock made with roasted bones as we find it has a richer flavor then un-roasted bones.
 
  • •We would also not recommend freezing the chicken parts you have cut up but are not going to use in tinfoil or aluminium foil like they do in the second video. Tinfoil will not prevent air from getting to the chicken while in the freezer and this will result in freezer burn. We would recommend putting the chicken in a plastic bag and then squeezing or sucking out as much of the air as possible. This will help your chicken pieces last longer in the freezer.
